Before we left for our cruise, we stopped and visited some of our best friends in Newport, the Hadfields. I think that Bill and their little baby, Will, were instantly best friends. This picture of the two hansom fellas is too cute not to post...thanks Katie!

I think that carrot cake is a must-have dessert on Easter. I found this recipe that looked really good at this new blog I've been reading, called The Pioneer Woman Cooks. It turned out fabulous, it was easy, and I didn't even need to buy a bunch of ingredients for it. If you're a carrot cake lover you should give it a try!! You can find the recipe, called Sigrid's carrot cake, on The Pioneer Woman Cooks blog.
Over Spring Break, Bill and I treated ourselves to a cruise to the Mexican Riviera. It was so relaxing and a lot of fun!! We left out of LA, and our ports included Cabo san Lucas, Mazatlan, and Puerto Vallarta. Cabo was gorgeous, but there were a ton of spring breakers there. We didn't care for Mazatlan that much because it was kind of dirty, and there really wasn't a lot to do there. Puerto Vallarta was our favorite. It was absolutely beautiful there, the shopping was great, and we were able to play around on the beach and in the ocean. Unfortunately, I reformatted our camera's memory card half way through the trip, and so we lost a lot of our pics. However, we still have some to show.

This weekend was so great! It is absolutely beautiful weather right now!! On Saturday morning, Bill and I went with some friends to hike Squaw Peak Mountain. Squaw Peak Mountain is literally just down the street from us. It was amazing. I'll be honest...it was fairly difficult, but at the end it felt like an amazing accomplishment. We have so many great hiking, biking and running trails in our neighborhood...I love it!
